Agostino Fiache and his son Antonio are the proud guardians of a century-old Italian Legacy.  As co-founders of Chicago based Nduja Artisans Saluemria, the Fiasche's are the culmination of five generations of Calabrian salumi makers.

Nduja Artisans Lardo is cured back fat from Iberico de Bellota pigs of Spain. Seasoned with sea salt, Black pepper, Juniper berries and lots of fresh herbs. It is used sliced thinly to add luxurious richness to dishes.  Use the lardo to wrap around melon, baked around a shrimp or shaved super thin.  Talk about melt in your mouth!  Average weight is about 3 pounds per piece.
